Have you ever had a perfectly ripe mango?!
Oh my gosh! They are soooo good! The sweet factor is on point, but it leaves just enough of a tang to make your taste buds salsa. <–Get it!? We’re making mango salsa! Hahahaha, okay, I’ll stop with the nerdy jokes, I promise.
How to pick the best mangoes possible:
The trick to making the best mango salsa is using ripe mangos. These beauties were perfect! They smelled sweet around the stem and were slightly soft to touch, but they didn’t feel mushy. Mangoes that aren’t totally ripe have a tendency to be tart, which can completely change the taste of the salsa.
Once you have selected the perfect mangoes, it’s time to cut them into chunks. I used to avoid mangoes, because I never knew how to cut them! It’s super easy, though! Check it out!!

Okay, now that you have your mango all ready to go, it’s time to make it into salsa! Add some finely chopped jalapeno, red onion, red bell pepper, garlic and cilantro. Then, mix in the juice of half of a lime as well as some salt. Taste it and see what you think.
If it needs more spice, add in more jalapeno. If it seems a little bland, try adding in a little more salt and if it needs a little more zing, then try adding in more lime juice or even a small dash of rice vinegar.
Keep tasting and tweaking until it is perfect, and then serve it on these delicious kalua tacos!
- 2 ripe mangoes, diced
- Half of a red onion, diced
- 1 Red Bell Pepper, diced
- 1 jalapeno pepper, finely chopped
- 2 cloves of garlic, finely chopped
- 2 T Cilantro, finely chopped
- Juice from half of a lime
- Salt to taste
- Mix the mangoes, onion, red bell pepper, jalapeno, garlic and cilantro into a bowl.
- Pour the lime juice over the top and season with the salt to taste.
