When life is hard, make Peach Parfaits with Greek Yogurt and Honey…oh, and dance to Peaches!
It was 2004 and I was 19; a student at Diablo Valley College and aggressively looking for a parking spot in my green Toyota Camry that was handed down to me by my mom. Peaches by The Presidents of the United States of America blared from my speakers while I tried to pretend that I wasn’t stressed out about my summer finals.
I was raising my almost one-year old son, while staying up half the night studying for my English exam, snacking on honey vanilla peach parfaits and nursing that beautiful baby of mine. He was my angel; the love of my life. The reason why I didn’t quit when I was exhausted beyond belief. Through-out the years, the reason for my persistence has not changed.
My angel baby – now man-child – and his two brothers are my reasons for everything.
Motherhood is bitter sweet. Just as much as I have laughed and enjoyed my sons, I have wanted to tear my hair out, and at times break down and cry. I don’t, though. I dance to Peaches.
My sons roll their eyes when it comes on, because they know that I am going to roll down the windows of my black SUV and shout-sing, “Peaches from a can, they were put there by a man in a factory downtown!”
They also know that I am going to dance, because that’s what I do when things are hard…
I find my inner spunkiness and dance around the kitchen to The Presidents of the United States of America while eating honey vanilla greek yogurt and, you guessed it, peaches.
To make it even sweeter, I add some brown sugar granola and a dash of cinnamon for depth of flavor.
Without the depth of the challenges that we face, how could we ever know the sweetness of success? These honey vanilla peach parfaits remind me of my aggressive persistence and my willingness to smile through the bittersweetness.
These peach parfaits get me through the 5 am wake-up calls that I require of my sons for homework that has not been done yet. Through the stubbornness of the teenager who desperately wants to be a man. And through the moments of me reminding them over and over that work ethic matters.
These honey vanilla peach parfaits remind me of all three of my angel babies, whose sole pillar of strength was their momma when they were little. I am not done being their pillar – or laying their foundation – yet.
These boys are loved and cherished even through my exhaustion, frustration and worry.
Babies to boys to teenagers to men, they will always be the reason I smile and dance to Peaches.
Here’s the Recipe:
- 1/2 cup of granola, plus 1-2 T for sprinkling
- 1 cup of honey, vanilla Greek yogurt
- 1 fresh peach, cubed
- 1/4 cup of blueberries
- 1 Banana, sliced
- Honey to drizzle over the top
- In a glass, add a layer of granola (1/4 cup), then a layer of yogurt (1/2 cup), then a layer of fruit, and so on and so forth until you use up the ingredients. End with a layer of yogurt and sprinkle the top with granola and drizzle with a tiny bit of honey.
